I don’t recall what inspired me to bring these two flavors together, but I’m really glad I did because this tastes amazing! The lemon is bright without the sour I normally associate with lemon because the coconut smooths out the sour note of the lemon. The coconut is sweet and creamy but balanced out with the tangy notes of the lemon. It reminds me a lot of lemon curd, but a sweeter lemon curd thanks to the coconut.
I started with a combination of organic green and red rooibos so that I could get the nutty notes from the red and the sweet, fruity notes from the green – and then added lots of lemon, lemon balm and coconut! It’s organic, vegan, naturally caffeine-free & gluten free!
Seriously, this is one that you’ll need to try! I think you’re going to love it! A perfect summertime treat!
