A fantastical, flavorful black tea blend that tastes like something you might find at a bakery! You’ll discover notes of maple & hints of butter & vanilla swirling around with preeminent flavors of gingerbread. This one makes an incredible latte!

Countdown to Catching Up – Tea 2 (Counting Down from 10 to 1!)

I love it when a tea comes out the way I want it to, but I can’t say that this happened when I conducted my first taste test of this tea. It needed something else to it. Then I realized it needed a bit of a creamy element. I had already added the vegan butter flavor to it to give it a “scone-ish” quality, but it needed more “cream” (clotted cream? Maybe.)

So, I added some vanilla bean to the tea & let it cure a little while with the new addition (this is why it took a little while for this batch to come out, a couple of the teas that I worked on needed some tweaking – like this one did!)

Anyway, the vanilla did the trick! Now it tastes like a lovely gingerbread scone, complete with a bit of clotted cream on it to complete the flavor profile. DELICIOUS is all I can say now!

This blend starts with a blend of black teas (Assam, Yunnan & a bit of Vietnamese to round things out) & to that, I added a few spices that you might find in your average gingerbread recipe, stuff like ginger (of course!), cinnamon, cloves, allspice & my favorite: nutmeg. Then I added some essence to complete my “gingerbread scone” recipe. After the first taste test, I added a bit of vanilla bean to bring out the creamy notes of the butter & give it a “clotted cream” note.

I think you’re gonna love this – even if it does arrive a couple of weeks after Christmas! It’s organic, vegan, gluten-free, allergen-friendly & all natural!

to brew: shake the pouch to ensure that the ingredients are well incorporated. There are quite a few different spices in this & you want to have them thoroughly dispersed throughout the tea when measuring! Use 3g of tea to 12oz of nearly boiling water (205°F) & steep for 3 ½ minutes. Strain & allow to cool for at least 10 minutes before sipping.

serving suggestion: As I mentioned in the above description, I love this as a latte, so I highly recommend brewing this a little stronger than you might usually (to accommodate for the addition of dairy) & adding a little bit of your chosen dairy to the cup. You won’t regret it! It’s also good served without any addition at all. If you want a sweeter cup, add about ½ teaspoon of sugar to the cup. It will help those spices come to life!
