Continuing my exploration through Ceylon and Indian tea, I have this offering from Sheffield spice and tea. I started by brewing this with 2 gram at just under 212 in a glass pot for about 3 minutes. I got from it a dark red and very clear liquor.
The infusion has an aroma of malt, chocolate, dark fruit. For brewing it so long its surprisingly fruity and low on astringency and bitterness. Sipping it produced many of the same flavors, there was just a hint of astringency on the tail end. Having gotten started in Chinese tea, im surprised at how different the blacks are. There chocolate flavor is so intense in the Indian and Ceylon tea. I wonder if this is difference in the roasting or oxidation, or just the terroir.
This is an excellent tea for adding milk and sugar, I always drink my tea straight unless Im doing a chai blend and this makes an Excellent chai tea.
I recommend this tea for anyone looking for a classic British style tea.
Flavors: Astringent, Chocolate, Creamy, Fruity, Malt, Mineral
Preparation
First tea of today is a green tea. China dragon with chrysanthemum, this tea is interesting and I struggled a little brewing it. It requires a very delicate brew with 175 and a short steep with alot of leaf to really bring out its flavor.
This time using a glass teapot to bleed off the heat, 175 water and 45 second steep. I used a bit more leaf this time as previously when I used hotter water, I got very intense bitterness and astringency, the same with longer steep times.
This time however I got a wonderful clear just barely yellow tea, that was light sweet, with citrus and lemon flavors and aroma’s and just a hint of astringency and vegetal notes. There was almost no bitterness.
There is a nice mouthfeel and you can almost feel the floral scents coming off it, but its not overpowering. I like this tea, its sweet , citrus and floral, but you still taste the astringent vegetal tones through it all.
I recommend this to anyone who likes a little sweet, citrus and floral notes to their green tea.

This is my second time with this tea (from the same batch). For some reason I did not enjoy my first round, but decided to give it another try today and I was quite pleased.
Flavors: Sweet, Toasted Rice
Preparation
I only have two followers, but I feel like I should apologize for the lack of logs I’ve done in the past couple days. I’ve been in a hazy cloud for the past couple weeks, and I suppose it has reached its climax in the last couple days. All I’ve been wanting to do is sleep.
But I got halfway through my rewatch of The Assassination of Jesse James by the Coward Robert Ford when I realized I hadn’t had much to drink today, so I washed the infuser mug I bought from Teavana and brewed some tea!
This time I chose Strawberry from the local shop five minutes from my house. It’s a fruity black tea — I love my fruity blacks — that never fails in a pinch. I super love the aroma, but sadly it doesn’t linger that much after brewed. Or maybe I just oversteeped it this round, because I got distracted by Casey Affleck.
Preparation
I purchased this tea from a local shop about five minutes away from my house. I am glad I made this little discovery. I have never been much of a white tea drinker, but lately that has all I’ve been craving. This tea is high in flavor and aroma, and overall a delicious treat! It has a very nice fruity taste without overwhelming the floral notes. It is also very easy to brew even when you find your attention divided. (I oversteep easily, yes, and the first time I did it, I didn’t find this tea bitter at all. Maybe it’s luck? Maybe it’s my tastes? Who knows! It keeps working out for me.)
Only thing is, the package recommends brewing this at boiling heat, and that’s super harsh for a tea like this? So I kept it at a nice, cool 175°. T’was perfect.
Still. If you are ever visit Las Vegas, I do highly recommend you taking a trip over to Henderson to visit Sheffield Spice & Tea Co. and try this tea.
