Work sipdown. I had a hard time getting the ratio right on this tea. Sometimes it was a lovely mint chocolate and sometimes it was very out of balance. Decent, probably pretty easy to replicate if I wanted. I still think I’d rather a good Yunnan black though.

Yesterday’s cold brew. Good flavor – orange and jasmine, but it had lots of little bits. The bits kept coming up the straw of the container I was using. It definitely detracted from my enjoyment of the tea, though it was pretty. If I cold brew this again, I’ll need to do it differently.

30 oz, some amount of leaf.

Sipdown. I was disappointed by this tea. It didn’t have staying power. Often the steep was uneven. I didn’t like the base of this blend. Overall not a repurchase and I will drop my rating down. 70

Giant mango pieces, smells of ginger.
3min- ginger, sweet, mango. Nicely blended. Ginger doesn’t overpower. Resteep didn’t give me much flavor. One steep and done tea. I ate all the mango pieces. 82

Smells of tropics, citrus, and a little bit of spice. I don’t quite get all the flavors in the taste. Flavors more subtle in taste. I wish some of the flavors would be more prominent. Maybe I’ll increase the amount of leaf I’m using. Play with the parameters a little. Thick mouth-feel. 2nd steep had more coconut coming out though I also steeped it longer. 1st steep was 2 min, 2nd steep was 3 min. I’ll probably try this again at 2.5 min. Spices were warming. I liked it.

Sipdown. Overall I enjoyed this tea. Pretty spicy in the ginger/cinnamon way. This last cup clogged the strainer. So that sucked :(
Tended to contaminate steeper with flavor as well. Probably not a reorder.

Nov 29th. I’m liking this tea more. Still bready, spicy. Tastes like eating a gingerbread house. I need to increase my rating to 85.

Smell: ginger, cloves, cinnamon
Taste: bread, cinnamon, ginger, clove
Continues to taste like gingerbread throughout the entire cup.
2nd steeping: as good as the first, I get more ginger from this steep.
Very warming cup of tea. The ginger is hanging out at the back of my tongue in between sips.

Flavors: Bread, Cinnamon, Clove, Ginger

I brewed the tea at 175° for three minutes. I liked that the resulting tea was tinted pink. I don’t know why but I like my tea to have a little color, and white teas usually don’t have much. It was probably the hibiscus turning it pink. Sometimes I think that hibiscus adds too much tartness to blends, but in this case there was a tartness that I felt in the back of my palate, but it tasted more like a fresh raspberry sort of tart rather than just a hibiscus “tart for the sake of being tart” note.
