Matcha is the finest and most excellent powdered-tea used especially for Chanoyu. Chanoyu has been referred to as the “Japanese Tea Ceremony” for many years but the word literally means ‘hot water for tea’. The art of Chanoyu is really a fusion of many Japanese arts with the focus of preparing a bowl of tea with a pure heart. Matcha is made from tea bushes being covered with shade before harvesting. This is in order to make the taste very sweet. The way of processing Matcha is quite different from the other teas. Tea leaves plucked by hand, steamed, dried, deveined and then finally ground into a fine Matcha powder. We use Kabuse Tea or shade grown Sencha to make our Matcha.
