Is Genmaicha an acquired taste?
I never thought of it as an umami thing! I like it, but I also enjoy a few flavored gens too, which makes me associate it as a base for other flavors blended with it.
I have never gotten into oolongs because they seem too light and don’t have enough of a base to make me feel like I’m not drinking wet air. I thought oolongs might be an acquired taste kind of tea.
Interestingly, though I don’t care for a lot of savory teas because they remind me of food which sets off my cognitive dissonance button, I never had the food association with genmaicha. Or at least not in a negative way. I suppose it’s because rice is a grain and grain has a long history in the beverage department. (I also have no problem with sake ;-).)
Would anyone ever consider cooking with Genmaicha? Have you ever tried it? How did it go?
I do! I make it into soup and occasionally use it as the liquid for rice. It is tasty!
I also tried making Matcha chocolate with genmaicha sprinkled in it but think I messed something up, the taste was fine but the texture was off, think that had to do with temperature.
