Evergreen Spice was inspired by the pristine evergreen forests and deciduous woodlands of the upper peninsula of Michigan! I started with a sweet Anxi Ben Shan oolong blended with my chai spice base, then I slow-roasted wildcrafted cedar leaves and finally finished it off with a touch of spearmint and tulsi.
Evergreen Spice opens up with smooth, sweet evergreen notes and warming chai spices. Caramelized cedar wisps through mid-sip and the finish feels like a cool breeze on the tongue, fading out into comforting warmth. A pure and inspired blend, Evergreen Spice is a favorite of mine to sip inside on cold winter mornings. This is a perfect embodiment of winter in northern Michigan and will please any tea lover!

In my super totally way profesh opinion, it’s approx. 193x better than the old version, for sure. I’d do a double blind study but I’m totes confident in my numbers.

Had some chocolate chai today. There is just nothing like Whispering Pines tea. So seriously good. I swear I can hear elven choirs every time I take a sip.

http://whisperingpinestea.com/wild-grey.html – Wild Grey is a very lightly flavored earl grey using our Wildcrafted Dian Hong and pure cold-pressed oil of bergamot, aged for 30 days. A warm, sweet citrus note mingles with malt and cocoa, sweet potato, and light spice. This blend is smooth, honey-sweet, and comforting. Wild Grey holds up to milk if steeped longer (5 minutes), but I prefer to drink it straight, steeping at 3 minutes for the first infusion, or brewing gongfu style!
http://whisperingpinestea.com/2014-huron-te-ji.html – The 2014 Huron Te Ji Shou Pu-erh was harvested in Spring 2014 and fermented shortly afterwards. It is “te ji” grade, a smaller leaf size that brews up quite strong. As with our other offerings, 2014 Huron Te Ji is a lighter fermentation, which will allow it to benefit from long term aging. Despite its young age, this tea is quite ready for drinking now, brewing up with sweet, warm petrichor and pinewood notes, along with a chocolaty finish and light hints of merlot. One of the beautiful things about this tea is the purity of it, which can be noted in the taste as well as the pure, heartwarming cha qi.

The first was a legit need for more Claritea which I’m glad I made because it seems likely I still be sick when it gets here Thursday. I need to keep track of my stock and not let it get too low. Evergreen Spice looks tasty.
Of course I needed free shipping so a few other things hopped along. Today’s order was pure hedonism though.
My first order came! Steeping the precious Claritea right now. Hopefully the 3 oz will last a while.

I love the new stamp design and my little note but I miss having the steeping directions on them. While I like experimenting and coming up with my own peramatuers it was nice to have a starting point.

i have to echo the frustration at not having the base steeping parameters on the packaging anymore for western brew. Gonfu is more of a play with what works for you, but if i’m rushing and want to do western, i don’t want to have to find a computer/phone to go look things up

Mi Lan Xiang is a famous varietal of Dancong oolong grown on Phoenix Mountain in Guangzhou, China. Phoenix mountain is a high elevation (1000m+ above sea level) mountain that spends most of the year covered in mist. Tea trees thrive in these conditions, producing some of the most complex and beautiful tea available! Mi Lan Xiang translates to Honey Orchid Fragrance, and carries, as the name implies, a warm honey and orchid flavor profile. Our Mi Lan Xiang is lightly charcoal roasted to bring out these notes. The flavor is smooth and sweet with thick honey and orchid, a light mineral aftertaste and lingering fruit and floral qualities.

Flavor wise, the best way to describe Moonlight Sonata is smooth, sweet, spiced honey drizzled into fresh white grape juice and infused with springtime wildflowers and a touch of tangerine. These 100g cakes consist of moonlight white tea and snow chrysanthemum flowers, both from spring 2015. They are ageable and will develop deeper, more malty base notes over the next decade, eventually tasting like a mix between an oolong and black!

Hi Brenden, I sent you a message via the message box on your website, but haven’t heard from you yet.
I’m putting this here because I am not sure where else to put it. As some of you may have noticed, I always ask for suggestions for pairing my teas with my book clubs book of the month. This month we were reading Station Eleven which has elements of camping/traveling on the road in a post-apocalyptic Michigan.
So, before placing my next order, I asked Brenden if he had any suggestions based on some descriptions of the book. He suggested a not yet released tea of his called Black Bear. It has lapsang souchong to give it some smoke (to represent the campfires) and a sweet, mild berry under note to represent foraging. I tried it when I first got it last week and it was lovely.
Last night, I had my book club meeting out by my fire pit. I have an electrical source in my pavilion so I was able to brew tea outside. The Black Bear was VERY popular. Everyone commented on how good/interesting it was. Success.
So, Brenden. Thank you so much for your suggestion and I can’t wait to see the reactions when you release this tea. It is a really nice offering. Thanks again.
